Your mission will be to locate the cards with a value that's immediately higher or lower than the last card played. To eliminate the multiple cards from the level it's as simple as tapping on the appropriate card to add it to your deck.

Although during your first games it may seem otherwise, strategy is actually a huge part of Undersea Solitaire Tripeaks. You'll have to very carefully select the cards of the level you want to eliminate to try to create combos as long as possible. If at any time you run out of combinations, you can pick up a new card from your reserve up to nine times.
